  1. 1 1/4 c. graham cracker crumbs (about 15 squares)or 1/14 c finely crushed whole whet flake cereal.

  2. 2 Tbls. sugar

  3. 3 tbls. margarine or butter melted.

  4. 2 pkgs. (8oz each)plus

  5. 1 pkg. (3 oz) cream cheese, softened

  6. 1 c. sugar

  7. 2 t. grated lemon peel

  8. 1/4 t. vanilla

  9. 3 egg s

  10. 1 c. dairy sour cream or Cherry, strawberry or blueberry glaze

  1. Heat oven to 350 degrees. Mix cracker crumbs, 2 T. sugar and the margarine. Pres in bottom of 9" springform pan. Bake 10 minutes; cool. Heat oven to 300 degrees. Beat cream cheese in large mixer bowl. Add 21 cup sugar gradually, beating until fluffy. Add lemon eel and vanilla. Beat in 1 egg at a time. Pour over crumb mixtures. Bake until center is firm, about 1 hour, 15 minutes until center is firm and brown. Cool. Spread sour cream on top. Chill Cherry Glaze 1 can (16 oz) pitted red tart cherries, drained (reserve syrup) ½ c. sugar 2 Tbls cornstarch 4 drops red food color. Add enough water to reserved cherry syrup to measure 1 cup.. Mix sugar and cornstarch in saucepan. Stir in syrup mixture. Cook, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Remove from heat; stir in cherries and food color. Cool completely.
