  1. 2 medium potato es

  2. 3 slices bacon

  3. 1/3 cup chopped onion

  4. 1 Tbsp. flour

  5. 2 to 3 tsp. sugar

  6. 3/4 tsp. salt

  7. 1/4 tsp. celery seeds

  8. Dash of pepper

  9. 1/3 cup water

  10. 3 Tbsp. vinegar

  1. Boil potatoes in their skins. Peel and slice thinly. Fry bacon slowly in skillet. Remove from pan and drain on absorbent paper; crumble.

  2. Saute onion in bacon fat until golden brown. Blend in flour and seasonings. Cook over low heat, stirring until smooth and bubbly. Remove from heat. Stir in water and vinegar. Bring to boil, stirring constantly, for 1 minute. Stir potatoes and crumbled bits of bacon in carefully. Remove from heat; cover and let stand until ready to serve.
