  2. 1 tablespoon margarine

  3. 1 cup wild rice

  4. 1 1/2 cups sliced mushrooms

  5. 1/2 cup finely chopped green onion

  6. 2 1/4 cups water

  7. 1/4 cup dry white wine

  8. 1/4 teaspoon salt

  9. 1/4 teaspoon pepper

  10. 1 cup canned bamboo shoots

  1. Melt the margarine in a 10-inch skillet. Add the wild rice, mushrooms, and onion. Saute over medium heat for 5 minutes, stirring frequently. Stir in the water, wine, salt, and pepper. Heat to boiling, stirring occasionally; reduce heat. Cover and simmer until rice is tender, about 40 to 50 minutes. Just before serving the rice, add bamboo shoots and continue cooking just until the bamboo shoots are heated through. If necessary, drain before serving.
