  1. 1 cup softened butter or margarine

  2. 1 cup packed brown sugar

  3. 1 cup sugar

  4. 2 large eggs

  5. 2 teaspoons vanilla

  6. 3 1/2 cups flour

  7. 1 teaspoon baking soda

  8. 1/2 teaspoon salt

  9. 8 tablespoons raspberry jam

  10. 4 tablespoons shredded coconut

  11. 4 tablespoons chopped walnuts

  1. Instructions Blend together the butter and sugars until creamy. Beat in one of the eggs until well-incorporated, then repeat with other egg and add vanilla. In a separate bowl, stir together the dry ingredients. Beat one-third of dry ingredients to the butter mixture and continue beating until smooth. Repeat with remaining dry mixture until it's all been used. Knead with your hands and shape into a large circle. Divide into four sections. Roll out one section on a piece of wax paper to a thickness of 1/2 inch. Spread 2 tablespoons of the jam over the dough. Top with 1 tablespoon of coconut and 1 tablespoon of walnuts. Roll up like a long loaf. Repeat with other sections and cover with wax paper. Chill overnight. Preheat oven to 375 degrees. Slice into 1/4 inch slices. Place on lightly greased baking sheets and bake for 8 minutes.
