  1. 1 lb Cottage cheese

  2. 2 ea Eggs beaten

  3. 1 tsp Lemon juice

  4. 1 tsp Lemon zest

  5. 1 c Sour cream

  6. 1 1/2 tb Sugar

  7. 4 Tbsp Flour

  8. 1/2 tsp Salt

  9. 1/2 tsp Cinnamon

  1. Method : Squeeze all moisture from cottage cheese in a cheesecloth bag. Put cheese through a fine seive and mix with the eggs, sugar, flour, lemon zest, lemon juice, 3 Tb of sour cream. Add the flour by the spoonful mixing continuously and mix until it is very smooth and thick. Refrigerate covered for 1-hr. then using a melon scoop scop-out balls & place on a floured surface. Press these balls into flattened, oval patties approx.

  2. thick and fry on both sides in pre-heated butter. Serve immediately after placing dollops of sour cream over each serving.
