  6. 3 lg Ripe tomatoes; seeded and 1 Celery rib; finely chopped

  7. 3 Scallions; finely chopped

  8. 1 sm Cucumber; peeled, seeded and -coarsely chopped

  9. 1 sm Carrot; peeled and finely

  10. -shredded

  11. 2 Jalapeno peppers; seeded and -finely chopped

  12. 2 tb Fresh thyme; minced

  13. -preferably lemon thyme

  14. 2 tb Italian parsley; finely

  15. -chopped

  16. 2 tb Balsamic vinegar or Red wine vinegar

  17. 1 ts Sugar

  18. 1 ts ;salt

  19. In a large nonreactive bowl, mix all ingredients

  20. together. Cover and refrigerate until chilled about 1

  21. hour.

  22. Judi's Note: I always add 2 cloves of garlic (minced)

  23. to this recipe for a tangier salsa.
