  5. 1 2/3 c All-purpose flour

  6. 1/3 c Peanut butter

  7. 2 ts Baking powder

  8. 1/2 c Granulated sugar

  9. 1 ts Ground cinnamon

  10. 2 Eggs

  11. 1/2 ts Ground nutmeg

  12. 2/3 c Sour cream

  13. 1 Ripe banana Preheat oven to

  14. 400 degrees. Place paper liners in muffic tin, set aside.

  15. Combine flour, baking powder, cinnamon, and nutmeg in medium bowl. Toss to

  16. blend with fork. Set aside. Peel banana, break it into small pieces, and set aside on wax paper. In large mixing bowl, combine peanut butter and sugar. Mix at medium speed to blend. Stop when necessary to scrape sides of

  17. bowl with rubber spatula. Add eggs and blend. Add banana and blend. Add

  18. flour mixture in two stages and mix until it is completely incorporated.

  19. Don't overmix. Add sour cream and blend. Spoon batter into muffin cups

  20. 3/4 filled. Bake for 25 minutes. Remove from oven and cool on wire rack for 10 minutes. Munch em up guys! --
