  2. BANANA BREAD PUDDING

  6. 4 cups French or Sourdough bread -- day-old; cubed

  8. 1/4 cup Butter or margarine -- melted

  9. 3 Eggs

  10. 2 cups Milk

  11. 1/2 cup Sugar

  12. 2 teaspoons Vanilla extract

  13. 1/2 teaspoon Cinnamon -- ground

  14. 1/2 teaspoon Nutmeg -- ground

  15. 1/2 teaspoon Salt

  16. 1 cup Bananas, firm -- sliced in

  17. 1 1/4 pieces

  18. 3 tablespoons Butter or margarine

  19. 2 tablespoons Sugar

  20. 1 tablespoon Cornstarch

  21. 3/4 cup Milk

  22. 1/4 cup Light corn syrup

  23. 1 teaspoon Vanilla extract

  24. Place the bread cubes in a greased 2-qt. casserole; pour butter over and toss

  25. to coat.

  26. In a medium bowl, lightly beat eggs; add milk, sugar, vanilla, cinnamon, nutmeg

  27. and salt. Stir in bananas.

  28. Pour over bread cubes and stir to coat.

  29. 40 minutes or until a knife inserted near the

  30. center comes out clean.

  31. Meanwhile, for sauce, melt butter in a small saucepan.

  32. Combine sugar and cornstarch; add to butter.

  33. Stir in milk and corn syrup.

  34. Cook and stir over medium heat until the mixture comes to a full boil.

  35. Boil for 1 minute.

  36. Remove from the heat; stir in the vanilla.

  37. Serve warm sauce over warm pudding.
