  1. 1 cup sugar

  2. 2 tsp ginger

  3. 1 tsp nutmeg

  4. 1 tsp cinnamon

  5. 1/2 tsp salt

  6. 1 1/2 tsp baking soda

  7. 1 cup margarine , melted

  8. 1/2 cup evaporated milk

  9. 1 cup unsulfured molasses

  10. 3/4 tsp vanilla

  11. 3/4 tsp lemon extract

  12. 4 cups unbleached flour

  1. Combine first six ingredients. Mix well. Add margarine, milk, molasses, and extracts. Mix well. Add flour one cup at a time, stirring constantly. the dough should be stiff enough to handle without sticking to fingers. Knead dough for a smoother texture. Roll the dough out to ¼ inch thickness and cut into cookies. Bake on a greased cookie sheet for 10-12 minutes. cookies are done when they spring back when touched. Don’t over bake.
