  5. --POTATO TOPPING--

  6. 6 md Potatoes, peeled, quartered

  7. 1/4 c Milk

  8. 1 tb Butter

  9. pn Nutmeg (generous pinch)

  10. --FILLING--

  11. 2 tb Olive oil

  12. 2 md Onions, chopped

  13. 1 tb Finely chopped parsley

  14. 1 ts Dried thyme

  15. 1 ts Dried sage

  16. 1 lb Ground beef

  17. 1/4 c Water

  18. 2 md Carrots, finely chopped

  19. 2 tb All-purpose flour

  20. 1 Beef bouillon cube

  21. 1 ts Granulated sugar

  22. 1 ts Ketchup

  23. 1 ts Dijon mustard

  24. 1 ts Worcestershire sauce

  25. Salt and pepper

  26. For topping, place potatoes in large saucepan of cold,

  27. salted water. Bring to boil, then simmer partially

  28. covered 20 minutes or until very tender. Drain. Add

  29. milk, butter, nutmeg, salt and pepper to taste. Mash

  30. potatoes until smooth and fluffy. Keep warm.

  31. For filling, heat oil in large skillet over medium

  32. heat. Add onions, parsley, thyme and sage. Cook 5

  33. minutes or until onions have softened slightly. Add

  34. beef and water to pan, stirring frequently to break up

  35. 3 to 5 minutes.

  36. Stir in carrots; cover, reduce heat and cook 15

  37. minutes, stirring occasionally.

  38. Stirring continuously, add flour, bouillon cube,

  39. sugar, ketchup, mustard, worcestershire sauce, salt

  40. and pepper to taste. Cook 5 minutes. Skim and discard

  41. any fat.

  42. Place meat mixture in buttered ovenproof casserole

  43. dish about 9 inches square. Spread potato mixture on

  44. top. Score topping using prongs of fork. Bake in

  45. 350 degrees F oven

  46. 30 to 40 minutes, until

  47. potatoes are golden brown on top and filling is hot.
