  1. 1 kg potatoes

  2. sea salt and ground black pepper

  3. 2 tablespoons chopped dill

  4. 2 tablespoons vegetable oil

  5. 250g smoked salmon, thinly sliced

  6. 100g creme fraiche

  7. 50g salmon roe, available at your local fish shop

  8. sprigs of fresh dill to serve

  1. Peel potatoes, and grate on the large holes of a grater. Place grated potatoes in a clean tea towel and squeeze tightly to remove as much moisture as possible. Place into a medium bowl with salt, pepper and dill. Mix well.

  2. Heat a heavy based pan over a medium heat. Add oil and spoon in loose dessert spoonfuls of the mixture. Flatten with a spatula and cook for 5 - 7 minutes on each side or until golden and crisp.

  3. Serve topped with smoked salmon, creme fraiche and salmon roe.
