  1. 600g watermelon (weight before peeling)

  2. 1 x small red onion, cut into very fine slices (I tend to quarter the slices)

  3. 16 x black olives in oil (preferably kalamata), halved (and pitted if necessary)

  4. 1 x red chilli, halved, deseeded and very finely sliced

  5. 40g fresh mint leaves, finely chopped

  6. 2 tbs olive oil (plus more for drizzling)

  7. 3 tbsp fresh lemon juice

  8. 150g feta cheese salt and freshly ground black pepper

  1. Peel the melon of its tough rind, Remove the seeds and cube the watermelon flesh into chunks. Combine the melon with the red onion, black olives, chilli, mint, olive oil and lemon juice. Divide the salad amongst 4 plates and crumble the feta cheese over. Season to taste and add a drizzle of olive oil.
