  1. Heavenly Delight Cheesecake

  2. 1 Tbsp graham cracker crumbs

  3. 1 cup low fat (1%-2%) cottage cheese

  4. 2 pkgs (8-ounce each) neufchatel cheese, softened

  5. 2/3 cup sugar

  6. 2 Tbsp flour

  7. 3 eggs

  8. 2 Tbsp skim milk

  9. 1/4 tsp vanilla or almond extrac Heat oven to

  10. Lightly grease bottom of 9-inch springform pan. Sprinkle with

  11. crumbs. Dust bottom; remove excess crumbs.

  12. Place cottage cheese in blender container, cover and blend at medium

  13. until smooth.

  14. Beat cottage cheese, neufchatel cheese, sugar and flour at medium

  15. speed with electric mixer until well blended. Add eggs, one at a

  16. time, mixing well after each addition. Blen in milk and extract.

  17. Pour into prepared pan.

  18. Bake 40 minutes until center is almost set and then turn oven off

  19. and let cheesecake cool down with the oven. Loosen cake from rim

  20. if necessary. Refrigerate at least 2 hours (over night is best).

  21. To keep this light, serve with fresh fruit.
