  3. 4 tablespoons butter, more may be needed

  4. 1 small onion, quartered

  5. 1/4 teaspoon dried rosemary

  6. 1/4 teaspoon dried thyme

  7. 2 sprigs fresh parsley

  8. 1/4 cup melted butter

  1. Instructions Preheat oven to 350°. Clean out inside of chicken and use a pastry brush to spread the lemon juice on the inside. Place the onion and herbs inside the chicken and put the whole chicken in a roasting pan. Roast for at least 1 hour and 15 minutes. During roasting, baste the chicken with melted butter. Test the chicken with a meat thermometer and make sure it's at least 175 degrees. Season the chicken with salt and pepper to taste. .
