  1. 1/2 cup 31g / 1.1oz Diced onion

  2. 2 cups 125g / 4.4oz Tomatoes - peeled and chopped (medium)

  3. 1 teaspoon 5ml Basil leaves

  4. 2 teaspoons 10ml Vegetable oil

  5. 2 teaspoons 10ml Zucchini - sliced (medium)

  6. 1/2 teaspoon 2 1/2ml Salt

  7. 1/4 teaspoon 1 1/3ml Pepper

  1. Saute onion and basil in oil 1 minute in large skillet over medium flame.

  2. Add zucchini; cook 6 minutes, stirring occasionally.

  3. Add tomatoes, salt and pepper; cook 4 minutes, or until tender.

  4. Serve immediately.
