  1. 2 tablespoons Crisp 'n Dry cooking oil

  2. 1 onion, peeled and chopped

  3. 1 cauliflower, cut into small florets

  4. 1 large leek

  5. 400g tin chopped tomatoes

  6. 100g spinach leaves

  7. 2 teaspoons curry powder

  8. 100ml water

  9. Easiest Ever Pancakes (see footnote)

  10. salt and pepper to taste

  1. Put the Crisp 'n Dry cooking oil into a large saucepan. Add the onions and fry for 5 minutes on a high heat. Add the curry powder and fry for a minute. Add all the ingredients (except the pancakes!) and cook for a further 5 minutes.

  2. Meanwhile, warm up the pancakes in the microwave for 2 minutes.

  3. Divide the mixture between the 8 pancakes and roll up.
