  6. 1 c -Warm water

  7. 2 1/2 c Flour;unbleached up to

  8. 1 ts -Salt

  9. 2 ts Anise seeds

  10. 2 tb Olive oil

  11. 1 c Raisins;seedless dark

  12. 1 c Olive oil;or other for -frying

  13. 1 1/2 c Honey

  14. 2 tb Lemon juice

  15. Frittelli di Chanuka Dissolve the yeast in 1 cup of

  16. warm water. Combine flour, salt and anise seeds in a

  17. bowl. Gradually add the dissolved yeast and the 2 Tbsp

  18. olive oil, mixing until a rather soft dough is formed.

  19. Turn out onto a floured working surface. Knead for about 10 minutes or until dough is smooth and elastic.

  20. Spread the raisins over the working surface and knead

  21. the dough over them until they have all been

  22. incorporated into the dough. Shape into a ball, cover

  23. with a clean kitchen towel and let rise in a warm

  24. place for 1 hour or till doubled in bulk.

  25. With the palms of your hands, flatten down to about 1/2 thickness. Let rest, uncovered,

  26. 15 minutes. With

  27. a sharp knife, cut into 36 diamonds.

  28. Heat the oil in a deep saucepan and fry the diamonds

  29. a few at a time, turning, until golden brown on both

  30. sides. Transfer to a paper towel to drain.

  31. Heat the honey in a saucepan with 2 Tbsp of lemon

  32. juice and boil for just 3 minutes. Arrange frittele on

  33. a serving plate and pour the hot honey over them.
