  1. Urad dal - 2 cups

  2. Grated ginger - 2 tsp.

  3. Green Chillies - 3, chopped

  4. Coriander powder - 1/2 tsp.

  5. Turmeric powder - 1/2 tsp.

  6. Asafoetida - a pinch

  7. Cumin seeds - 1 tsp.

  8. Vegetable Oil - 2 tsp.

  9. To be ground into a paste:

  10. 1 tablespoon grated fresh coconut

  11. 2 green chillies

  12. 4 cloves

  13. 2 cardamom

  14. 2 cinnamon

  15. 1 teaspoon khus-khus

  16. 1 piece ginger

  1. Put the ghee in a glass bowl and microwave on HIGH for about 30 seconds.

  2. Add the onions and microwave on HIGH for 1 minute or until light pink in colour.

  3. Add the paste and microwave on HIGH for 20 seconds.

  4. Add the rice, vegetables, lemon juice and salt and mix very well. Add 1 3/4 teacups of water and microwave on HIGH for 12 minutes, stirring in-between after every 3 minutes.

  5. Put off the cooker and allow to stand for 3 minutes.

  6. Decorate with fried onions and cashew nuts.
