  1. Salad Greens with Honey-Mustard Dressing

  2. 1/4 cup honey

  3. 3 T. mustard

  4. 3 T. olive oil

  5. 1 T. shallot, minced

  6. 1 T. apple cider vinegar

  7. Juice of 1/2 lemon

  8. Salt and pepper to taste 8 cups mixed greens such as radicchio, curly endive, romaine, and leaf lettuces

  9. 1/2 cup red onion, sliced

  10. 4 oz. mild goat crumbled For the dressing, combine all ingredients until blended. Toss with

  11. greens, onion, and goat cheese. Arrange greens on four plates.

  12. Variation: Top with pecan crusted chicken breast, sliced and fanned.
