  1. 4 lamb chops, about 1 1/2 inches thick ñ

  2. 6 ounces each - well trimmed

  3. 1/4 teaspoon freshly ground black pepper

  4. 2 tablespoons chopped fresh savory

  5. 1 tablespoon virgin olive oil

  6. 1/2 teaspoon salt

  1. Sprinkle the chops on both side with the pepper and savory.

  2. Pour the oil onto a plate, and dip the chops, one side and then the other, in the oil.

  3. Arrange the chops on the plate, cover with plastic wrap, and refrigerate until ready to cook later the same day.

  4. At cooking time, sprinkle the chops with the salt. Cook over high heat on a grill for about 3 1/2 to 4 minutes on each side for medium-rare meat.

  5. Transfer to a warm oven, and allow the chops to rest for a few minutes before serving.
