  1. 1 tablespoon 15ml Olive oil

  2. 2 cups 125g / 4.4oz Coarsely-chopped red onion

  3. 1/4 cup 36g / 1 1/3oz Chopped shallots -

  4. 2 teaspoons 10ml Sugar

  5. 1/4 cup 15g / 1/2oz Sliced green onion

  6. 2 teaspoons 10ml Dijon mustard

  7. 1/2 teaspoon 2 1/2ml Dried thyme - crushed

  8. 6 Eggs

  9. 1/4 cup 59ml Water

  10. 1/4 teaspoon 1 1/3ml Salt

  11. 1/4 teaspoon 1 1/3ml Ground white pepper - ground

  12. 1 cup 146g / 5.1oz Shredded Swiss cheese

  1. In a 10-inch ovenproof skillet heat oil over medium heat. Add red onion, shallots (if desired), and sugar. Cook for 12 to 15 minutes, or until tender and golden, stirring often. Remove 1/4 cup cooked onion. Stir green onion, mustard, and thyme into skillet. In a bowl beat together eggs, water, salt and pepper. Stir in 3/4 cup of the cheese. Pour into skillet.

  2. Bake in a 375 degree oven for 10 to 15 minutes or until set. Top with remaining cheese and reserved onion. Cut into wedges.
