  1. 4 tablespoons extra-virgin

  2. olive oil

  3. 1 teaspoon white truffle oil

  4. Juice of 1/2 lemon

  5. Salt

  6. Freshly ground black pepper

  7. 400 g/14 oz raw salmon fillet, skinned and thinly sliced

  8. 6 tablespoons mayonnaise

  9. 2 tablespoons cream

  10. A few chives, snipped

  11. Serves 4

  1. Method :

  2. Season olive oil, truffle oil, and lemon juice with salt and pepper and mix thoroughly.

  3. Distribute onto 4 flat plates and place thin slices of salmon flat on top of the sauce.

  4. Thin mayonnaise with cream. Using a spoon, distribute onto salmon.

  5. Garnish each serving with freshly chopped chives and serve with fresh baguette.
