  1. 2 1/2 pounds beef eye of round roast

  2. 3/4 cup ketchup

  3. 3/4 cup apple juice or white wine

  4. 1 tablespoon brown sugar

  5. 1/2 teaspoon cumin ground

  6. 1/2 teaspoon oregano dried

  7. 1/8 teaspoon cayenne pepper

  8. 1 tablespoon soy sauce

  1. Spray a dutch oven with cooking spray. Heat over medium high heat until hot.

  2. Add roast; cook 4-6 minutes, turning to brown evenly.

  3. Combine ketchup and remaining ingredients.

  4. Pour over roast and cover tightly.

  5. Bake at 325 degrees F for 2 1/2 hours or until roast is tender.

  6. To serve, slice roast thinly; arrange on serving platter.

  7. Spoon sauce over slices.
