  6. 16 ounces water packed cherries sour

  7. 1/2 cup sweet milk (recipe below)

  8. 1/2 cup packed dates

  9. 1/4 cup light oil

  10. 2 large eggs -- separated

  11. 3/4 cup unsweetened applesauce

  12. 1 3/4 cups whole wheat flour

  13. 2 tablespoons lowfat soy flour

  14. 2 tablespoons nonfat dry milk powder

  15. 1 tablespoon cinnamon

  16. 1 tablespoon baking powder

  17. 1 teaspoon baking soda

  18. 1/2 teaspoon cloves

  19. 1/2 teaspoon nutmeg

  20. 1/4 teaspoon salt

  21. 1. Prepare an 8 inch square cake pan. Oil & flour. 2. Preheat oven to 350 F. 3.

  22. 4. After cherries have drained will, measure

  23. 1 cu

  24. 5. In blender puree together

  25. 1/2 cup sweet milk with

  26. 2 cup packed dates.

  27. 6. Blend oil, egg yolks and applesauce. Set aside next to cherries.

  28. 7. In a small bowl beat

  29. 2 egg whites until stiff and set aside.

  31. a large bowl combine flours, dry milk, baking powder, baking soda, salt and sp

  32. ices. Stir well. 9. Gradually mix blended liquid ingredients into dry ingredien

  33. 10. Gently stir in cherries.

  34. 11. Then fold in the egg whites just until combined.

  35. 12 Pour batter into the prepared cake pan and bake at

  36. 350 F for 50 minutes.
