  1. Crockpot Honey Dijon Pork

  2. Serves 8. 1/2 cup chopped onion

  3. 2 apples, peeled and sliced

  4. 1 Tbsp honey

  5. 1 Tbsp Dijon mustard

  6. 1/2 tsp coriander seed, crushed

  7. 1/4 tsp salt

  8. 1 (2 to 2 1/2 lb) rolled boneless pork roast

  9. 1 Tbsp cornstarch

  10. 2 Tbsp water

  11. 4 to 6 qt. slow cooker, combine onion and apples. In small bowl,

  12. combine honey, mustard, coriander and salt; mix well. Spread on all

  13. sides of pork roast; place roast over onions and apples. Cover;

  14. cook on LOW for 7-8 hrs. Remove roast from slow cooker; place on

  15. serving platter. Cover with foil.In small saucepan, combine cornstarch

  16. and water, blend well. Add apple mixture and juices from slow cooker;

  17. mix well. Cook over med. heat until mixture boils, stirring

  18. occasionally. Cut roast into slices. Serve with sauce.
