  1. Collard Greens

  2. Serves 12 5 bundles collard greens

  3. 3 cups salted water

  4. 3 large smoked ham hocks

  5. 1 cup sugar

  6. 1/2 cup salt

  7. 3 tablespoons crushed red pepper flakes or to taste

  8. Thoroughly wash collard greens, be sure to pull leaves apart and remove any sand. In a medium saucepan, bring 3 cups salted water

  9. to a simmer. Place smoked ham hocks in salted water and cover. Cook

  10. ham hocks until slightly tender and remove from pan. In the same

  11. saucepan, add collard greens and remaining ingredients. Cover and 2 1/2 to 3 hours until water reduces, add more water

  12. and additional salt and sugar, to taste.
