  1. 6 large baking potatoes

  2. 1 large green pepper, diced

  3. 1 large red pepper, diced

  4. 1 large onion, diced

  5. 4 tablespoons vegetable oil

  1. Place the potatoes into a large pot and cover with salted water. Bring to the boil over high heat, then reduce heat to medium-low, cover, and simmer 10 minutes. Drain, then set aside until cool. Once cool, dice into cubes.

  2. Combine the potatoes, green pepper, red pepper and onion in a mixing bowl. Drizzle in the vegetable oil, and gently stir until evenly coated.

  3. Cook the mixture in a nonstick frying pan over medium-high heat until crispy and golden brown, stirring occasionally, about 20 minutes.
