  1. 1/2 cup suet

  2. 20 each green tomatoes ored

  3. 18 each apples, tart peeled

  4. 1 1/2 pounds raisins, seedless

  5. 3 tablespoons cinnamon

  6. 3/4 cup fruit juice any, sweet

  7. 3/4 cup citron minced

  8. 6 tablespoons orange zest

  9. 3 teaspoons salt

  10. 1 teaspoon cloves

  11. 1 1/2 teaspoons allspice

  12. 1 teaspoon ginger

  13. 1/2 teaspoon nutmeg (1/2 to 1 tsp)

  14. 1 cup beef stock prefer veal stock if possible

  15. 1 x brandy if desired*

  1. Cover meat with water and simmer until tender.

  2. Force meat, suet, tomatoes and apples through coarse food chopper.

  3. Add remaining ingredients (except brandy) and simmer 1 hour, stirring frequently.

  4. Fill 3 hot, sterilized 1 quart jars.

  5. Place 2 tbsp. brandy on top, if desired.

  6. Seal. Store in cool place.
