  1. 1 x 185g (6 1/2 oz) naan bread, cut into 2cm ( 1/4 in) cubes

  2. 3 large eggs, beaten

  3. 200g (7oz) cooked potatoes, cubed

  4. small onion, finely chopped

  5. 60g (2 1/4 oz) cooked peas

  6. 50g (2oz) cheddar cheese, grated

  7. 2 tbsp olive oil

  8. Salt and pepper

  1. Preheat oven to 200ºC/400ºF/Gas Mark 6 or grill.

  2. Mix together the naan, peas, potatoes, onions and cheese and season well.

  3. Heat the oil in a non-stick frying pan. Add the egg to the mixture, mix well and spoon it into the hot oil.

  4. Cook for 2-3 mins, then either put into preheated oven or under the grill for 10 mins until just set.

  5. Cool, then chill well. Cut into wedges and serve.
