  6. 2 tb Oil

  7. 1 t Roasted sesame oil (opt)

  8. 2 Garlic bulbs

  9. -cloves)

  10. 1 md Onion -- sliced

  11. 4 c -- water or vegetable

  12. stock

  13. 1 lg Potato -- scrubbed and cut -into cubes

  14. 3 Bay leaves

  15. 1/2 ts Thyme

  16. 4 tb Shoyu, or miso to taste

  17. pn Cayenne

  18. Smash each clove of garlic with the handle of a knife

  19. to make removing the skin easier. Remove the skin and chop the garlic.

  20. Heat the oils in aheavy kettle; add onion and garlic.

  21. Saute over very low heat for about 20 minutes or until well cooked.

  22. Add the water, potato, bay leaves, and thyme. Bring

  23. to a boil, then reduce heat and simmer until the

  24. potato is tender. Remove the kettle from the heat and ad the shoyu or miso; thn add the cayenne to taste.

  25. Serve with a hot, crusty loaf of whole grain bread

  26. (preferable sourdough) and a big green salad.
