  6. 5 lbs red potatoes -- cooked with skins on

  7. 5 stalks celery -- chopped

  8. 1 large onion -- chopped

  9. 3/4 lbs bacon -- cut in pieces

  10. 3/4 cup white vinegar

  11. 2 cups water

  12. 1 cup sugar

  13. 1/3 cup fat from bacon

  14. 2 Tablespoons all-purpose flour

  15. 1/2 tsp salt

  16. 1/4 tsp pepper

  17. 2 tsp salt -- added to hot potatoe

  18. 1. While potatoes are cooking, chop celery and set aside.

  19. 2. Chopp onions and set aside

  20. 3. Fry bacon , chop in to small pieces and setr aside

  21. 4. Remove bacon from fat, add onions to fat and saute'

  22. 5. Remove onion from fat and remove fat from pan.

  23. 6. Re-add 1/3 c fat to pan.

  24. 7. Add flour and brown slightly

  25. 8. Add vinegar, water , salt ,sugar and pepper

  26. 9. Cook until clear.

  27. Peel potatoes and cut into slices while still hot. Add the 2 tsp salt to hot peeled potatoes.

  28. Add onion, celery,bacon and sauce to potatoes. Let stand for several hours to let flavors blend.

  29. Decorate with bacon or parsley or whatever. - - - - - - - - - - - - - - - - - -
