  1. 2kg waxy potatoes

  2. 1 small onion, finely chopped

  3. 250ml concentrated stock (made from half a stock cube)

  4. 5 tablespoons vinegar

  5. 2 tablespoons oil

  6. salt and freshly ground black pepper to taste

  7. sugar to taste

  8. chopped fresh chives

  1. Boil the potatoes in a large pan until soft. Drain and let cool slightly. Peel while still warm and cut into thin slices.

  2. In a small bowl, stir the hot stock with oil, vinegar, salt and sugar.

  3. Put the warm potato slices in a salad bowl, toss with the chopped onion and pour the hot stock over them. The potatoes should still be warm so they absorb the liquid better.

  4. Leave to stand for 5 minutes and season with salt and pepper. If desired, sprinkle with chopped chives and serve warm.
