  5. 3/4 lb Boned, skinned chicken

  6. -breast, cut in 1/2-inch

  7. -strips

  8. Tarragon, to taste

  9. Salt and pepper, to taste

  11. 4 tb Butter

  12. 5 Shallots, chopped

  13. 1 Clove garlic, chopped

  14. 3/4 lb Yellow and black

  15. -chanterelles, coarsely

  16. -chopped

  17. 2/3 c Red wine

  18. -Zinfandel)

  19. 1 1/2 c Low-salt chicken broth

  20. 3 tb Cream

  21. 1 tb Chopped chives or a handful

  22. -of chive spears, for -garnish

  23. (may substitute other mushrooms)

  24. Sauteed Strips of Chicken with Black and Yellow Chanterelles and Red

  25. Wine Sauce

  26. This dish comes from Cahors, a town in the southwest of France known

  27. for its dark, rough red wine. The sauce is equally good with salmon.

  28. Sprinkle chicken strips with tarragon, salt and pepper, then dust with

  29. flour.

  30. Lightly saute in about half the butter (or butter-oil combination)

  31. 2 or 3 minutes

  32. aside.

  33. Saute shallots, garlic and mushrooms in remaining butter until lightly

  34. browned, then pour in wine and cook over high heat until reduced to

  35. only a few tablespoons.

  36. Add broth and cook over high heat until this too is reduced by about half and the liquid is well-flavored.

  37. Add cream, return chicken and accumulated juices to pan, and heat

  38. through briefly.

  39. Serve immediately, garnished with chives if desired.
