  2. 1 tbsp fennel, chopped

  3. 1 tbsp coriander, chopped

  4. 1 tbsp chopped chives

  5. Pinch chilli flakes

  6. 3 tbsp olive oil

  7. 1 lime, zest of

  8. 1 lime, juice of

  9. 1 tsp honey

  10. 1 tsp whole grain mustard

  11. 4 rock lobster or crayfish

  12. 1 tsp fennel seeds

  13. 1 tsp coriander seeds

  14. 1 tsp black peppercorns

  15. 2 bay leaves

  16. 1/2; onion

  17. 1 stick celery

  18. 2 carrots

  1. Steamed rock lobster with creme fraiche dressing Add the fennel, coriander, peppercorns and bay leaves and roughly chopped vegetables to a large pot of salted water. Bring to a boil.

  2. Add the rock lobster and boil for 7 minutes then remove and allow to cool for a couple of minutes.

  3. Whisk the lime juice into the wholegrain mustard in a glass bowl to emulsify. Add the chilli flakes, the minced garlic, the lime zest and the honey. Stir and then add the salt and a drizzle of olive oil to form an emulsion and then the crème fraiche. Toss in the chopped herbs.
