  2. 3 pound beef chuck or boneless round roast

  3. 2 tbsp. vegetable oil

  4. 1 cup chopped onion

  5. 1 cup ketchup

  6. 1/4 cup Worcestershire sauce

  7. 2 tbsp. brown sugar

  8. 2 tbsp. cider vinegar

  9. 2 tsp. salt

  1. Heat oil in a large pot over medium high heat. Add roast and brown on all sides. Add onion and cook until golden. Stir together ketchup, Worcestershire, brown sugar, cider vinegar and salt in a small bowl. Pour mixture over roast. Reduce heat, cover and simmer roast about 3 hours until tender.

  3. Transfer roast to a platter and slice. Serve pan sauce on the side.
