  4. 1 large shallot , finely chopped

  5. 1 tablespoon(s) finely grated ginger

  6. 1 head(s) Boston or Bibb lettuce , leaves separated

  7. 3/4 pound(s) thinly sliced roast beef , torn into 2-in. pieces

  8. 2 plums , thinly sliced

  9. 1 small seedless cucumber , halved lengthwise and thinly sliced

  10. 1 large carrot , cut into matchsticks

  11. 1/2 cup(s) fresh mint leaves

  1. In a small bowl, whisk together the vinegar, honey, 1/2 tsp salt and 1/4 tsp pepper; stir in the shallot and ginger.
