  2. Title: Roast Duckling Milan

  5. 1 Duckling; thawed & quartered

  6. 1/4 ts Black pepper

  7. 1 tb Oregano, dried

  8. 1/2 tb Basil, dried

  9. 4 tb Dijon mustard

  10. 1/3 c Parmesan; grated

  11. 1/3 c Vermouth, dry

  12. 1/4 c Parsley, chopped; (garnish)

  13. Preheat oven to 400 degrees. With a sharp knife, score

  14. skin of duckling quarters. Place duckling quarters,

  15. skin side up, on a rack in a uncovered roasting pan;

  16. sprinkle with pepper, oregano and basil. Roast 1 hour.

  17. Remove duckling from rack. Drain liquid from pan.

  18. Place duckling quarters in pan without rack. Spread

  19. mustard over top of duckling quarters; sprinkle with

  20. cheese. Pour vermouth in pan and continue baking at

  21. 400 degrees for 45 minutes or until tender. Garnish

  22. with parsley. --
