  1. 6 slices bacon

  2. 1/2 large onion chopped

  3. 1/2 green green bell pepper

  4. 2 tablespoons flour, all-purpose

  5. 1 1/2 cups beef stock prefer veal stock if possible

  6. 1 x sage to taste

  7. 1 x salt to taste

  8. 1 x black pepper to taste

  9. 1 pound beef leftover rare, bite size

  10. 16 ounces black-eyed peas

  11. 1 can

  12. 1 pound noodles

  1. Chop about 6 slices bacon and saute until crisp.

  2. Remove and set aside.

  3. Add minced garlic, 1/2 chopped onion and 1/2 chopped green pepper, lightly saute in the bacon fat.

  4. Stir in about 2 tablespoons flour, stir until smooth.

  5. Slowly stir in 1 to 1 1/2 cups beef stock.

  6. Add sage, salt, pepper.

  7. Add leftover rare beef (bite size), 1 can black eyed peas and bacon crisp.

  8. Simmer until cooked through, and serve over warm pasta with Parmesan cheese.

  9. Good with chipped beef too.
