  2. 1/2 cup ancho chile powder

  3. 2 tablespoons ground cumin

  4. 2 tablespoons salt

  5. 4 cups peanut oil

  6. 4 large potatoes -- sliced lengthwise

  7. into very thin shoestring strips

  1. Combine the chile powder, cumin and salt and set aside.

  2. In a large saucepan over high heat, heat the peanut oil to 375F, or until a bit of potato sizzles when immersed.

  3. Fry the potatoes in batches for about 3 minutes, or until crisp and golden brown.

  4. Drain on paper towels.

  5. Immediately season with the spice mixture and serve.
