  1. Toast almonds in a shallow pan in a 350 degree oven for 10 minutes. Cool and coarsely chop. Mix flour, sugar, baking soda, salt and nuts in a large bowl. In a separate bowl, beat eggs, vanilla, almond extract and zest and add mixture to flour, mixing to blend. On a grased and floured baking sheet, take half the dough and pat into a log about ½ thick, 1½ inches wide and 12 inches long. Leave at least 2 inches and form the other log. Bake in a preheated, 300 degree oven for 50 minutes (until golden). Cool on wire rack for 5 minutes. Put loaves on a cutting board and with serrated knife, cut at 45 degree angle, about ½ inch thick. Lay slices flat on baking sheet and cook at 275 degre for 20-25 minutes, turning once. Store in airtight container.
