  1. 2 md. (3-inch diameter) fresh beets

  2. 1 Tbsp. unsalted butter

  3. 1 Tbsp. honey

  4. 4 tsp. Dijon mustard

  5. 2 tsp. fresh lemon juice

  6. 1 Tbsp. chopped fresh mint

  7. Salt and pepper

  1. Heat oven to 375 degrees.

  2. Trim root and grees from beets - but don't trim closely. Place beets on a foil-lined baking sheet and roast in oven until tender, about 45 minutes.

  3. Let beets cool. When cool enough to handle, remove skins and cut into eighths.

  4. Whisk together lemon juice, mustard, and honey in a small bowl.

  5. Place a medium skillet over over medium-high heat. Add butter and swirl to melt without burning.

  6. Add beets and cook, stirring often, until lightly caramelized, 4 to 6 minutes.

  7. Reduce heat to medium, stir in mustard sauce, and season with salt and pepper. Heat for 2 minutes. Add mint and serve.
