  1. Rice and Raisin Pudding

  2. 2 cups cooked brown rice, cold

  3. 2/3 cup thick nut milk or sweet fruit juice (apple, pear, peach or apricot)

  4. 1/2-2/3 cup maple syrup or fruit concentrate

  5. 2 Tablespoons arrowroot powder

  6. 2-3 teaspoons grated lemon rind or orange rind

  7. 2 teaspoons real vanilla

  8. 1-1 1/2 teaspoons cinnamon

  9. 1 teaspoon guar gum or xanthan gum

  10. 1/8 teaspoon sea salt

  11. Optional: 1/2-2/3 cup raisins, currants, chopped dates or chopped nuts

  12. Preheat oven to 375 degrees F. Combine all ingredients carefully

  13. with a fork so as not to mash the rice. Mix thoroughly. Spread

  14. the mixture in a lightly oiled 9inch X 9inch casserole dish and bake 35-45 minutes, uncovered, untill "set" and somewhat firm.

  15. Serve dessert hot or cold.
