  1. Onion Marmalade: (makes 2 cups) 1 1/4 lb red or yellow onions -- (4 cups) finely

  3. 2 tbsp honey or sugar

  4. 3 tbsp red wine vinegar -- (3 to 4)

  5. 1/4 cup water

  6. Marinade: 6 large cloves garlic -- chopped

  7. 2 tbsp soy sauce

  8. 2 tbsp fresh ginger root -- grated

  9. 2 tsp Dijon mustard

  10. 1/3 cup fresh lime juice

  11. 1/2 cup olive oil

  12. cayenne pepper to taste salt and pepper to taste 4 pork tenderloins (3/4 lb each) -- trimmed
