  2. 5 hard boiled egg s

  3. 1 teaspoon salt , divided

  4. 3 green onion s, sliced

  5. 1 cup mayonnaise , or more as needed

  6. 2 tablespoons sweet pickle relish

  7. 1 tablespoon yellow mustard

  8. 1 tablespoon celery seed

  9. 1/2 teaspoon pepper

  1. Cook potatoes in boiling water and cover for 40 minutes or until tender; drain and cool. Peel and cut into 2-inch cubes. Chop egg whites, ½ teaspoon salt and onions. Mash egg yolks; add remaining ½ teaspoon salt, mayonnaise and next 4 ingredients, stirring until blended. Gently stir into potato mixture. Cover and chill at least 2 hours.
