  1. 1 cup (150g) white self-raising flour

  2. 1 cup (160g) whole meal self-raising flour

  3. 1/3 cup (75g) caster sugar

  4. 1 cup 2low-fat ricotta cheese

  5. 1 1/2 cups (375ml) skim milk

  6. 2 egg whites cooking oil spray

  7. 1/2 cup (125ml) maple-flavored syrup

  8. 1 liter low-fat vanilla ice-cream

  1. Method : Sift flours and sugar into large bowl, whisk in cheese and milk. beat egg whites in small bowl with electric mixer until soft peaks form, fold into ricotta mixture. Drop 1/2 cup (125ml) of batter into heated non-stick pan which has been coats with cooking oil spray, spread into 14cm round; cook about 2 ,minutes or until browned underneath. Turn pancake, brown other side. Repeat with remaining batter. You will need 8 pancakes for this recipe. Serve pancakes with maple syrup and ice-cream; top with fresh berries, if desired.
