  1. 3 cups 711ml Cooked cubed potatoes

  2. 1 1/2 cups 219g / 7.7oz Coarsely chopped apples

  3. 1 Bacon

  4. 1/2 cup 31g / 1.1oz Chopped onion

  5. 1/2 cup 55g / 1.9oz Celery - chopped

  6. 1 1/2 tablespoons 22ml Flour

  7. 3/4 cup 177ml Apple juice - (or water)

  8. 1/3 cup 78ml Vinegar

  9. 1/3 cup 65g / 2 1/3oz Sugar

  1. In skillet, cook bacon. Remove and drain. Pour off all but 3 T bacon fat, add onion and celery and stir fry 1-2 minutes. Blend in flour. Add juice and vinegar, stirring until mixture thickens. Add sugar.

  2. Preheat oven to 350F.

  3. Place potatoes, apples, and crumbled bacon in greases 1 1/2 qt casserole. Add skillet mixture, mixing lightly. Cover and bake 30 minutes.
