  1. For vangi bath powder:

  2. 1/4 cup chana dal (split Bengal gram)

  3. 1/4 cup urad dal (split black gram)

  4. 2 (to 3) bay leaves

  5. 2 teaspoon pepper (corn)

  6. 2 teaspoon cloves

  7. 4 (to 5) dried red chillies

  8. 1/4 cup coconut, (dessicated)

  9. 2 tablespoon coriander powder

  10. 2 tablespoon red chilly powder

  11. For Vangi Bath:

  12. 4 cup (pre) cooked rice

  13. 1 cup Eggplant (brinjal, cut in small pieces)

  14. 1 onion , (thinly sliced)

  15. 2 green chillies , (chopped)

  16. 4-5 curry leaves

  17. 1 teaspoon mustard seeds

  18. 2 (green) cardamom

  19. Salt to taste

  20. 1/2 teaspoon turmeric powder

  21. 2 tablespoon vangi bath powder

  22. 4 tablespoon (clarified butter)vegetable oil

  23. 1/2 cup Water

  1. Dry roast the first six ingredients in a pan . Cool and add next three ingredients . Grind together to make a fine powder. Cool and store in airtight container. It will make around 100 gm of vangi bath powder.

  2. For vangi bath:

  3. Heat clarified butter or oil in a wok. Add mustard seeds and green cardamom , sauté till crackling.

  4. Add curry leaves , onions and green chilies. Cook for 2-3 minutes.

  5. Now add brinjal pieces , salt , turmeric powder and 2 tablespoon of vangi bath powder.

  6. Mix well , add 1/2 cup water and cook for 5-7 minutes till brinjal pieces are tender.

  7. Add cooked rice and give it a nice stir , cook for 5-7 minutes or till all spices mixed with rice.

  8. Remove from heat and serve hot.
