  1. 3 large eggs , at room temperature

  2. 3/4 cup(s) (packed) light brown sugar

  3. 2 teaspoon(s) vanilla extract

  4. 3/4 cup(s) orange blossom, lavender, or other honey

  5. 3/4 cup(s) vegetable oil

  6. 2 1/2 cup(s) unbleached all-purpose flour

  7. 1 teaspoon(s) baking powder

  8. 1 teaspoon(s) baking soda

  9. 2 teaspoon(s) cinnamon

  10. 1/2 teaspoon(s) salt

  11. 3 cup(s) diced, peeled, and cored crisp apples (Fuji, Granny Smith, or Golden Delicious)

  12. 1 cup(s) broken walnuts

  13. 1 cup(s) diced dried apricots or golden raisins

  14. Honey-Cream Cheese Frosting

  15. 1/2 cup(s) finely chopped walnuts

  1. Heat oven to 350 degrees F. Spray a 9x13-inch cake pan with nonstick spray.

  2. In a large bowl, with an electric mixer, beat eggs, brown sugar, and vanilla for 5 minutes, or until light. Slowly beat in honey and oil until well blended.

  3. In a separate bowl, stir flour, baking powder, baking soda, cinnamon, and salt together. Add flour mixture, apples, walnuts, and apricots to egg mixture; fold together until blended. Pour into prepared pan. Bake 35 minutes, or until top is set; cool in pan. Spread with Honey-Cream Cheese Frosting ; sprinkle with chopped walnuts. Cut into squares.
