  1. 1 cup water

  2. 1/2 cup caster sugar

  3. 1 green tea bag

  4. 1 punnet (120g) raspberries

  5. 1 punnet (110g) blueberries

  6. 1 punnet (220g) strawberries, hulled, halved

  7. 2 1/2 cups (350g) seedless watermelon, peeled and chopped

  8. 1 cup (250ml) lemonade

  9. 1 cup (250ml) cranberry juice

  10. 1 x 750ml bottle sweet champagne (muscato)

  11. ice and mint sprigs to serve

  1. Combine water and sugar together in a small saucepan and bring to the boil. Reduce heat and simmer until sugar dissolves. Take off heat and add tea bag. Allow to stand for 15 minutes; squeeze tea bag and remove from water.

  2. Place berries and watermelon into a 3 litre capacity jug, pour over green tea infusion.

  3. Add lemonade, cranberry and champagne and stir.

  4. Refrigerate for several hours or until well chilled and infused.

  5. Serve in tall glasses on the rocks topped with mint if you like.
