  1. 3 oz. pkg. sun dried tomatoes (not oil packed)

  2. 4 boneless, skinless chicken breasts

  3. 1/4 cup chicken broth

  4. 1 tsp. dried basil leaves

  5. 3 cups sliced mushrooms

  6. 1 onion, chopped

  7. 2 oz. can sliced black olives, drained

  1. Slice tomatoes into julienne strips. Combine with remaining ingredients in a 3-4 quart crockpot. Cover crockpot. Cook on LOW for 8-9 hours or until chicken is thoroughly cooked and no longer pink in center. Serve with hot cooked polenta or rice.
